INGREDIENTS

Filling:
  • 1½ cups strawberries, chopped
  • ½ cup blueberries
  • 1 tbsp lemon juice
  • 1–2 tbsp monk fruit sweetener (to taste)
  • 2 tsp cornstarch
  • ½ tsp vanilla extract
Crumble Topping:
  • ¼ cup old-fashioned oats
  • ½ cup all-purpose flour
  • 2 tbsp monk fruit sweetener
  • 3 tbsp vegan butter, softened
  • ½ tsp cinnamon
  • Optional: pinch of salt (or omit entirely)

INSTRUCTIONS

1. Preheat oven to 350°F.

2. Make the filling:

a. Gently toss strawberries and blueberries with lemon juice, sweetener, cornstarch, and vanilla.
b. Pour into a small baking dish.

3. Make the crumble:

a. Mix oats, flour, monk fruit, and cinnamon.
b. Cut in vegan butter until crumbly.

4. Assemble:

Sprinkle topping evenly over fruit.

5. Bake:

30–35 minutes, until bubbling and lightly golden.

6. Cool:

for 10–15 minutes before serving (helps thicken + improves blood sugar response).
