Kidney-Friendly Roasted Garlic Cauliflower Mash

This creamy, flavorful side dish is a great low-potassium alternative to mashed potatoes. It’s easy to make and packed with nutrients.

INGREDIENTS

  • 1 head of cauliflower, cut into florets
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt (optional)

INSTRUCTIONS

    1. Preheat the oven to 400°F (200°C).
    2. Cut the top off the garlic head to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in foil. Roast for 30-35 minutes until soft and golden.
    3. Meanwhile, steam the cauliflower florets for about 10 minutes or until tender when pierced with a fork.
    4. Once the garlic is roasted, squeeze the cloves out of their skins into a large bowl.
    5. Add the steamed cauliflower, remaining olive oil, and almond milk to the bowl with the roasted garlic.
    6. Use an immersion blender or potato masher to mash the mixture until smooth and creamy.
    7. Stir in the chopped chives and black pepper. Add salt if using, but remember that limiting sodium is important for kidney health.
    8. Serve warm and enjoy!
