Kidney-Friendly Roasted Garlic Cauliflower Mash

This creamy, flavorful side dish is a great low-potassium alternative to mashed potatoes. It’s easy to make and packed with nutrients.
INGREDIENTS
- 1 head of cauliflower, cut into florets
- 1 head of garlic
- 2 tablespoons olive oil
- 1/4 cup unsweetened almond milk
- 2 tablespoons chopped fresh chives
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt (optional)
INSTRUCTIONS

- Preheat the oven to 400°F (200°C).
- Cut the top off the garlic head to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in foil. Roast for 30-35 minutes until soft and golden.
- Meanwhile, steam the cauliflower florets for about 10 minutes or until tender when pierced with a fork.
- Once the garlic is roasted, squeeze the cloves out of their skins into a large bowl.
- Add the steamed cauliflower, remaining olive oil, and almond milk to the bowl with the roasted garlic.
- Use an immersion blender or potato masher to mash the mixture until smooth and creamy.
- Stir in the chopped chives and black pepper. Add salt if using, but remember that limiting sodium is important for kidney health.
- Serve warm and enjoy!
